Well That Wasn’t Planned

In case you can’t tell from the title, this post wasn’t the one I had planned for today. If you follow me on Instagram you probably already know that we made an unexpected trip after work last night.

Yesterday afternoon started out normal. After work I ate a KIND bar as a snack and as some fuel before my run.


This was a new flavor for me, and just like all of the other KIND bars, I loved it.

For my run yesterday I did five miles in some absolutely beautiful weather!


I was so excited that it was warm enough to wear shorts and a short sleeved shirt!

After my run I came back in and stretched and was about to start getting dinner ready when Ryan came home from work. I hugged him and we started to talk a little bit about our days at work. As we were talking, he went to our backyard to check on his dogs, Bear and Shadow. (I say his dogs because Ryan has had them since he was in high school, and he is the one who always takes care of them. I help with what Ryan needs me to with the dogs, but he really does all the work, which is why I call them his. But I guess I should really say our dogs… oh well. Now I’m totally off subject. Back to what I was saying!) I never mentioned it on here, but Bear hurt his leg last Friday. He was trying to jump our fence, (which he always does and we can’t get him to stop), and his back leg got hung on part of the fence. We don’t know how long he had been stuck when Ryan found him last week. Max time was maybe an hour and a half to two hours, but hopefully it was much shorter than that.

We didn’t take him to the vet last week because nothing looked or felt broken, just swollen. We thought we would just keep an eye on him, and we figured it would heal on his own.

Well when Ryan brought Bear in yesterday from the backyard to the garage to let him rest in his kennel we noticed something different about his hurt leg. It had a spot that was completely open, and it looked like we could see the bone! Ryan hurried and put Bear in his kennel and loaded him in the car and we both headed to the vet. Obviously, that was not part of our plans for the night.

We went to a vet that was only about ten minutes away from our house, and everyone was super nice there. By the time we got there it was about 6:00. Ryan and I talked in the waiting room, and we decided it would be best for me to go home and cook dinner and then come back when Ryan was done to pick up him and Bear. We had no idea how long this would take, and I hadn’t even started on dinner.

I drove back home and started on this recipe for quinoa, black bean, and corn tacos.

I finished cooking everything right when it was time to go pick up Ryan and Bear, so the timing was perfect. I put a lid on the pans on the stove to keep the food warm and headed to the vet.

I got there, and a lady was teaching Ryan how to wrap Bear’s leg. Then they put this cone on his head so he wouldn’t mess with his leg or the wrap.


I feel so bad when I watch Bear walk anywhere now. He bumps into everything, haha!

They said he would be fine, but we had to make sure to clean his leg and rewrap it everyday. They weren’t sure how it happened, but the vet’s guess was that when he hurt it last week it somehow got infected, and then it just got worse until it opened up a hole on his leg. So it was good we went so they could clean him all up before he got worse!

Once we got home I finished up the last minute touches on dinner, and we ate. I loved these tacos!

My plate is on the left, and Ryan’s is on the right. I had mine on corn tortillas, and topped it with spinach, tomatoes, avocado, and salsa, which is why you really can’t see the quinoa, corn, and black bean mixture. But hey, the more toppings the better! 😉 Ryan had his on a whole wheat tortilla topped with cheese and avocado.

After dinner, I packed lunches and cleaned the kitchen. It was almost 9:30 by this point, and I was exhausted.

My original plan for today’s post was to post a workout, but after last night, there was no way I felt up to writing a post. So sorry, I know I mentioned on Wednesday to be on the lookout for a new workout, but sometimes things happen that we don’t plan for. But that’s okay; that’s life. You just roll with it and keep going. That is one thing I have learned, and I continue to learn. So hopefully I can share a new workout next week. 🙂 

So if something happens that you don’t plan for today or this weekend, just go with it and don’t let it ruin your day. Life is always changing, and that keeps it from getting boring! I want to leave you with this:

Birthday Celebrations!

First off, I want to start out by giving a HUGE happy birthday to the most amazing husband in the world!!!

So before I get I give you all a recap of our weekend, I have to say a few things.

Ryan, thank you for always being there for me, holding my hand, making my tears go away, just like the picture above shows.

Thank you for always making me laugh. Thank you for being the amazing Christian man and leader that I need. Thank you for praying for me, loving me, and always putting me above yourself. Thank you for supporting me, putting up with me, and never getting mad when my alarm goes off at 4:45 in the morning. 😉

Thank you for constantly encouraging me and supporting me in everything I do. Thank you for being a gentleman at all times and doing the little things, like opening my door and cleaning the dishes. You are an amazing person, and you positively impact so many  people in our life. You make me a better person, a better wife, and a better Christian. Okay, so now onto a recap of our super fun, marvelous weekend! This means I definitely have to link up with Marvelous Mondays!


Like I mentioned, we started celebrating Ryan’s birthday Saturday by staying at a hotel that night and going out to eat. The hotel was really nice, (and I got a great deal which made it even better!), but the only disappointment was that the pictures showed there was an indoor hot tub with the indoor pool, but I guess they haven’t updated their website because where the hot tub should have been was just a table and chairs. 😦 But we definitely didn’t let that ruin our weekend, and we still had a blast!

We started off the day by going to Ryan’s favorite store!


I actually really enjoy going to this store too. Ryan didn’t buy anything, but he had some things he needed to return and we just looked around.


I told Ryan to pick anywhere he wanted for us to eat, and this was his choice.


Burger House Hamburgers! Ryan loves places like this, where they just make good burgers, fries, and homemade shakes. He isn’t a fancy restaurant guy, which I love about him. Plus, I love restaurants like this too, so it made for a perfect dinner.


This was my meal. I know this looks like a lot of food, but I actually got the kids meal! This was the kid’s burger and fries and then a small vanilla milkshake. It was all delicious! 🙂

I think the handsome birthday boy liked his dinner.


After we ate we were both stuffed and went back to our hotel room to relax and watch the Dallas Mavericks basketball game. Ryan didn’t want to do anything else. I know this date night doesn’t seem like much, but it was perfect for us!

We woke up the next morning and were ready for the free breakfast the hotel offered by the time it opened at 7:00 a.m. I enjoyed some oatmeal with walnuts and some eggs.


Ryan and I both agreed that it was one of the best free hotel breakfasts we had ever had. The eggs were actually real and didn’t look like patties. (Do y’all know what I’m talking about? Where they don’t look or taste like eggs? If you don’t know, consider yourself lucky).

By the time we got back home it was too late to go to our own church, so we watched a sermon online together, and then took our dogs out for a walk before the Cowboys football game started.


We actually went for a walk/run, and I was very proud of Ryan because it has been a while since he last ran. But when we finished I think he was a little tired. 🙂


For the rest of the afternoon we relaxed, Ryan watched football, and I did some grocery shopping and food prep for the week. Ryan also helped me make dinner, so we had some delicious chicken fajitas with guacamole!


I ate mine on corn tortillas and topped them eat with spinach and tomatoes. Then I had carrots, bell pepper, and some Almond Thins with guacamole. Delicious!

That was all of our birthday weekend, but of course we are still celebrating today!


I got this Happy Birthday sign at WalMart last night, so it will probably be up all week. 🙂 Tonight we are having Ryan’s favorite meal for dinner, cheeseburgers, chips and queso, and macaroni and cheese. Then pumpkin pie for dessert!
