Happy Valentine’s Day!

Happy Valentine’s Day everyone! This post is coming a little later than usual, but oh well.

I wasn’t sure if I was going to post today because of reasons stated in my last post, but I couldn’t resist!

I wish I could have been able to write the posts I wanted to about Valentine’s Day before this, but oh well, I will write them at some point. 🙂

So I’ll be honest, Valentine’s Day isn’t my favorite holiday. Probably because I think it’s a made up holiday so that stores can make money. But, I still enjoy today. 🙂 I think it’s so important, actually it’s most important, that people show love to the special people in their life year around, not just on today. That doesn’t mean celebrating today with that special person is wrong either though.

Ryan and I prefer to keep Valentine’s Day low key and not spend too much money. After all, my birthday is in three days, so that’s way more important to me than Valentine’s Day. 😉 But we still have plans to make tonight a fun, romantic, inexpensive date night. 🙂

I will go pick us up dinner at a restaurant Ryan has been wanting to try that is known for it’s burgers, fries,  and shakes. A.K.A. Ryan’s favorite kind of restaurant. When I am out picking up dinner, Ryan is going to make sure everything is perfect at home for a romantic, date night dinner at home. This is a perfect, low key Valentine’s Date for us. We would much rather do this than go out to an expensive restaurant that is extremely crowded and wait forever to be seated. Um, no thanks. We will stay at home and be comfortable. 🙂


I can almost guarantee I will be wearing fuzzy socks on this date. #totallynormal

I am also excited for the rest of this weekend! Like I have mentioned, my birthday is this Saturday, so this weekend we are celebrating that with my family.

Tomorrow morning Ryan and I are volunteering with a group from our church to do some type of canned food drive or something. (I’m not totally sure what we will be doing; I guess I will find out tomorrow!) Then tomorrow night Ryan and I are having dinner with my parents, brother, and SIL to celebrate my big day. I think we are all staying the night with my parents because Sunday we are having a big lunch with the rest of my family to celebrate my birthday and my little cousin’s 8th birthday, which was earlier this month. Here’s the whole group who should be at our Sunday lunch!

I am so excited for the birthday celebrations to begin!

Lucky for me though, the celebrations won’t end this weekend! Ryan and I will go out to eat by ourselves next weekend to celebrate my birthday! Since my birthday is on a Monday and I will have work the next day, I told Ryan I would rather us go out on a weekend so we won’t have to worry about working the next day. I also don’t mind extending my birthday celebrations. 😉

So there’s a little bit of what I will be up to this Valentine’s/birthday weekend! Oh I will also be fitting in a 17 mile run at some point! This will be the longest distance for me to ever run; I’m pretty excited!

Date Night, Errands, and Tennis

Mondays are usually hard because I mean, let’s be honest, who wants to go back to work after the weekend? Well, today is a good Monday because Ryan and I are both off of work! I am looking forward to a seven mile run, waffles for breakfast, seeing my friend Brittany for a bit, and maybe some disc golf with Ryan and my Dad! Oh, and maybe  we can finally put our Christmas tree up today… Oops! At least it’s not February yet, right? 😉

Even though my weekend is not over yet, I will go ahead and do a recap. Everything has been marvelous so far, so obviously I need to link up with Katie! 


Friday night was a perfect start to this weekend! We have a couple of Chili’s gift cards we got for Christmas, so we used part of one to buy dinner and bring home, and we got a red box movie. We ate in the living room while watching “Olympus Has Fallen”. Oh, and I was in my pajamas. Perfect date night!


Seriously, I know sometimes it is fun to go out and dress up, but Ryan and I love ordering food from a restaurant, bringing it home so we can eat and relax in our own home, all while watching a movie in our sweats or pajamas. If you have never done this, you should!


I had the mango chile tilapia from their lighter choice menu, and it came with broccoli and rice. This dinner was delicious, and didn’t leave me feeling stuffed, which was a major plus.

Saturday I got up about 6:45 to get ready for my long run, which was 13 miles.


I got to use my running belt that Ryan gave me for graduation for the first time, and I loved it! It didn’t bounce or bother me, and it was nice to have water when I needed it. I felt great during the run, which was a big encouragement since I have many more long runs to do that are much longer than 13 miles!

I refueled after my run with some healthy spinach blueberry pancakes.

I ended up topping them with half of a banana, some peanut butter, and a little bit of pure maple syrup. I was using my own recipe for this, and I enjoyed it, but I need to work on tweaking a few things before I can share the recipe on here. If the green scares you, don’t worry, I promise you can’t taste the spinach! It’s a great way to get some veggies in at the beginning of the day!

For the rest of the day Ryan and I ran some errands. We got my oil changed in my car, went to the bank, and drove to the closest James Avery to pick up my charm bracelet. When we got home I started cooking dinner, and then we dug in! We had black bean veggie burgers, green beans, and sweet potato fries.

After dinner Ryan and I finished our Scrabble game that we started last weekend but never finished. Unfortunately I lost. 😦 But it was still fun, and I am determined to win next time!

Sunday Ryan and I went to church, then came home and had leftovers for lunch.


I had quinoa with barbecue tempeh on top, a salad, and green beans.

After lunch I went grocery shopping and then came home to change into some athletic clothes so Ryan and I could play tennis.


I have mentioned this before, but tennis is my favorite sport, and it is something Ryan and I both love playing together. The weather was so beautiful, we had to enjoy it by doing something outside! I love that it’s January and I was able to wear shorts outside and be comfortable. 🙂

Once we got home I started cooking dinner, and boy oh boy, it was a good dinner!


I made this butternut squash Mexi-Bake from Danica, and it is a new favorite! The husband and I both thoroughly enjoyed it!


I topped both of our bowls with 1/4 of an avocado, and Ryan put some tortilla chips in his. This meal is full of veggies and is meatless, but I think even the meat lovers will still love this recipe!

Afterwards we relaxed and watched Revenge.

After our busy, non-stop weekend last week, it was nice to be home this whole weekend. 🙂

Freezing Weather and Soft Serve Ice Cream

Are y’all staying warm in this freezing weather?? I can’t believe the temperatures some of y’all are having! In Texas it’s not quite as cold as it is for y’all who are in the negatives, but it’s really cold for Texas! It was 16 degrees yesterday morning when I woke up and the highest it ever got was 30. I know this is normal for some of you, but it’s not for me, and I am never prepared for weather like this! I know, I’m a baby in the cold.

Because it was so cold in the morning, and I knew I needed to get in my run before the afternoon, I switched up my marathon training schedule a bit. I was supposed to run 6 miles yesterday and do cross training today, but I ended up doing my cross training yesterday and I will run 6 miles later today.

I did this workout from Pinterest (follow me!) and then did my own short leg workout.

This is a perfect workout for you to add on to another workout you have already done for a little extra strength. I am making sure that I am keeping my legs strong since I will be running more than I am used to for marathon training. I don’t want to hurt a knee or anything else on my leg because they are too weak. I know that maintaining my strength workouts will be important for my training!

After my workout I showered and got ready to go meet Ryan at his work for lunch. I was excited to wear a new outfit that I got this weekend while shopping with my Mom.

IMG_5169I got the gray dress for $10 (regular $70) and the yellow sweater for $10 (regular $45). Perfect outfit for my  new job too!

I packed Ryan and I leftover lentil enchiladas from Sunday night for lunch with apples and bell pepper. The best part though was dessert. Ryan’s work has a soft serve ice cream machine so we thought it was the best decision to balance out our nutritious lunch with ice cream. 🙂 Obviously this makes the most sense. And yes, it was freezing outside, but I still thoroughly enjoyed this treat. I don’t have a big sweet tooth, but I have always loved ice cream. 🙂


Vanilla is always the best choice, always.


I wish we could have lunch together more often; it was so nice!

After I left Ryan’s work I went to get my fingerprints taken for work, and then headed home to finish meal planning for the week. Then I went grocery shopping and came home to start cooking dinner.

We had vegetarian chili with some cornbread (both recipes from Peas and Thank you. I am seriously obsessed with this cook book!) I made the chili with tempeh, and Ryan and I both really enjoyed it!


Ryan didn’t even know there wasn’t meat in it at first. And for those of you who don’t know, he is a meat lover!


The cornbread was a perfect side for this dish, and I crumbled about half of my piece of cornbread into my chili, which made it even better!

Oh, and one more random fact for you. I wore this “S” sticker on my sweater all day without realizing. I wish I could say this doesn’t happen to me often, but I am the queen at forgetting to take tags and stickers off.

Christmas 2013 Part 1

I hope all of you had a wonderful Christmas and were able to spend lots of time with family! My Christmas was fabulous, and we aren’t even done celebrating yet! Instead of making one super long post about our Christmas celebration, I thought I would break it up. This part will be about me and Ryan’s Christmas together that we did on the 23rd (part 1), part 2 will be a recap of celebrating with my side of the family, and part 3 will be a recap of celebrating with Ryan’s side of the family. We are heading out this afternoon when Ryan gets off to go to his parents’ house and spend the weekend there celebrating. I love how long our Christmas celebrations last!

Ryan and I celebrated Monday night, on the 23rd, as the last date of the 12 dates of Christmas and it was so wonderful! I know some of you may not understand why we chose to celebrate on a day other than Christmas or Christmas Eve, but we knew we would be with our family both of these days, and we wanted a day to celebrate just us. It was really so nice, and I wouldn’t have it any other way. We were able to focus on each other completely, and our celebration was much more intimate and relaxed.


Confession: This picture was actually taken on Christmas Eve at my parents’ house. When Ryan and I celebrated on the 23rd I didn’t exactly get ready (aka, I didn’t do my hair and I was wearing sweats and a t-shirt), so I decided to share a picture where we looked a little more presentable. 🙂

Before we ate we looked through our stockings to see what Santa brought us. You see, Santa is a very smart man and obviously knew Ryan and I were celebrating two days early, so when Ryan was at work he sneaked in and filled up our stockings with goodies! He must have done this when I was at the grocery store…


As you can see, Ryan’s stocking is overflowing so Santa couldn’t fit his cheetos in his stocking, so he just set it on top. Santa is a problem solver.


Excuse my foot, but here is some of what was in Ryan’s stocking. He got some much needed dress socks, cheetos, a candle, and a small football that isn’t in the picture.

IMG_4973I got Christmas ornaments, two KIND bars, a candle (that isn’t in the picture), and a set for doing my nails. Maybe this will help me actually paint my nails… Oh, and there is the football that wasn’t in the picture with Ryan’s stocking!

After we went through stockings we read the Christmas story in the bible, and then enjoyed a candlelit dinner.


Sidenote: I LOVE having the Spode Christmas plates that I got as a graduation gift!

For dinner, we had the most romantic food possible: homemade pizza on sweet potato crust.


Can you guess whose half has the veggies and whose half does not? 😉

We did the same thing as we did for our sweet potato protein packed pizza, except we didn’t add chicken this time.

After dinner we exchanged gifts.


We moved the gifts from under the tree to under our “fireplace”. 😉


I got Ryan an AV cord, which apparently goes from his playstation to our television, so that whenever we watch shows from Netflix it will show up clearer than before. I also got him some of these prana zion pants that are for climbing, hiking, and camping, but they didn’t get here in time so I had to print off the receipt and I wrapped that for him. He was still super excited to know they would be coming soon! Finally, his favorite gift I got him was an ipad! He was so surprised when he opened this; the look on his face was priceless! I love giving people gifts that they love and are totally surprised about! It has been hard to get him away from his ipad ever since he opened it. 😉 I was really only able to get this because I got a really good deal on it. One of my parents’ neighbors didn’t want it anymore, so he sold it to me for a really affordable price. Score!

Ryan did awesome and once again proved he knows me better than I know myself.


He gave me a Camelbak backpack for running/biking/hiking, the first book of the Divergent series, the recipe book Peas and Thank you, pro compression socks, the movies “Elf” and “The Hobbit, two pairs of fleece lined leggings, and gum! All of these are perfect for me, and I am so thankful for everything. Yes, I know, he spoils me!


I can’t wait to go out for a long run with this!

The presents were nice, but they definitely weren’t what made this night so special. Our first married Christmas together was more perfect than I could have imagined, and it’s just because we were together. We ended the night playing with our new presents and just talking. Perfect date night with my husband.


Oh, and some of you have mentioned you want to do the 12 dates of Christmas next year. If you do, I want to let you know something Ryan and I decided to start doing. On day 4 of the 12 dates we were supposed to write each other a hand written note. We decided we are going to do this every year, and I’m going to get a notebook that we can keep all of our letters in every year. Since this year is coming to an end we naturally wrote about the past year, and we thought years later it would be fun to look back and read about what happened that year and what we wrote each other. We also wrote each other a handwritten note on our wedding day, and this will be the first letter I put in our notebook, followed by the letters we wrote each other this Christmas. This was Ryan’s brilliant idea, and I love it! Even if you have already been married several years, I think this would still be a fun tradition to start! I love to look back on things from the past!

Now, I need to go pack for this weekend at my in-law’s, try to fit in a workout, get my tires aired up, and maybe try to hit up a few stores for clearance Christmas items! I have a lot to do before we leave! I hope you all have a great day, and keep enjoying that family time! Don’t lose the Christmas spirit yet! 🙂

Icepocalypse 2013

This weekend I have seen “Icepocalypse 2013” on facebook and Instagram by a lot of my friends who live around me. In case you don’t know, Texas has experienced a bad ice storm this past weekend. Friday many schools (including mine) and work places (including the Hub’s work) were closed. Today, there are still many schools and companies that are shut down because some of the roads are still that bad. Please keep those traveling and driving to work in your prayers as we all know bad weather makes traveling even more dangerous.

Because of this “Icepocalypse”, Ryan and I spent our whole weekend in our warm, Christmas decorated home. We only got out once, and that was yesterday to go to work. I am very ready to get out of the house today, but relaxing all weekend with Ryan at home was fantastic. Actually, it was marvelous, which means I obviously need to link up with Katie. 🙂


I went grocery shopping Thursday night so we would have plenty of food for the whole weekend and not have to get out. The grocery store was crazy on Thursday night since everyone had the same idea as me and wanted to stock up. Oh well, I made it out alive and got home crazy before the roads got too bad.

Our whole weekend was full of watching movies (a lot of Christmas movies 🙂 ), eating good food, and playing some games. So a lot of my pictures will be of the food we ate. If you need some ideas of warm food to eat on cold days, this should give you some ideas. 🙂


Friday for lunch I made us chili, since this is definitely one of the best meals to have on cold days. I added beans to mine, some quinoa, and some veggies (chopped up carrots, broccoli, mushrooms, and onion) to give it some nutrition and so I didn’t have to eat as much of the meat from the chili.

Friday afternoon Ryan and I layered up so that we could go explore the streets around the house and see what damage the ice had done.

I wish I had taken more pictures besides this one, because you really can’t tell how bad it is. Many trees fell, which was sad because some of the trees were beautiful, big ones that had been there a long time! In our backyard we lost a lot of branches off some of our trees.

Friday night for dinner we enjoyed some leftover chicken I had cooked earlier in the week with sweet potato fries and veggies.


Obviously if you put avocado in your chicken it tastes better. Anything with avocado tastes better.

Later I was really craving something sweet, so I made a healthy pumpkin pie mug cake. I used this recipe as a base, but I ended up changing a lot of things. It was still really good, and totally took care of my craving for dessert.


Saturday morning for breakfast I had some eggs with veggies, a huge piece of acorn squash, and a piece of cinnamon raisin Ezekiel bread with peanut butter.


Lunch Saturday was leftover chili, and for dinner we had avocado chicken parmesan. We love this meal.


I ate mine with quinoa and of course veggies. In this picture you can’t even tell that is a chicken breast, but trust me, it’s good.

And for some reason Saturday afternoon all I wanted for a snack was a green peanut butter banana smoothie. I knew I shouldn’t have something this cold when it was freezing outside, but I wanted it real bad. So I just went with it.


It was delicious, but I was freezing afterwards. Was it worth it? Oh yes.

Saturday night we played Mancala and then watched the Mavericks play. When I say we watched the Mavericks, I mean I fell asleep on the couch while Ryan cheered them on for the both of us. I mean, the game didn’t start until 9:00; there was no way I could stay awake for that whole thing.

Sunday Ryan and I finally got out of the house for a little bit and went to church. Before we went though I enjoyed these amazing carrot cake waffles. Seriously, they tasted like cake!


I topped mine with blueberries, half of a banana, and pure maple syrup.

After church we came home and had some leftovers for lunch. I enjoyed a quinoa, veggie, chicken, egg scramble.


This is what happens when you have a bunch of leftovers but you aren’t sure what to have. You put everything in a skillet and cook it together to make something that is called “pure deliciousness”.

We relaxed, napped, and watched movies for the afternoon and then enjoyed some chicken tortilla soup that I put in the crockpot before we went to church. It had been cooking all day, and it made the kitchen smell amazing!


Our crockpot was full of the soup, so we have a ton of leftovers. Come on by if you want some, I promise it was good. 🙂


I added beans to mine (I don’t put beans in the soup I make in the crockpot because Ryan doesn’t like them. I just cook them on the stove real quick before we eat and add them to my bowl.) and some avocado, because like I said earlier, avocado makes everything better.

I did do some at home workouts this weekend, including this Gotta Hit Everything workout. I totally forgot how good this workout was and how much it made me sweat! If you do it let me know what you think!  I wished I could have ran this weekend, but there was no way I was getting out on our roads to run. I really want to run today too, but I still think it’s too risky. Hopefully tomorrow I can hit the pavement with my running shoes. 🙂 Today will be another day of at home workouts, which is not a bad thing! I just miss running. 🙂

Oh, I almost forgot some fun news! Saturday night my dad signed us up for another race on December 21! He is doing a 5k and I am doing a 15k! I have mentioned before how much I love doing races with my Dad, so I am really excited!

Over this whole weekend Ryan and I watched Hunger Games, Jingle All the Way, Anchorman, Jack Frost, a Christmas episode of the Office, and I am sure more movies that I am forgetting. Ryan and I both said last night we are tired of watching movies for a little while, haha. We are also both definitely ready to get out of the house. Now don’t get me wrong, this weekend was fantastic! I loved just being able to relax with my husband, and honestly, we have been so busy, we needed this weekend, but now I am ready to do something! Ryan is off again today (Yay!!), so I think we are going to try to go out and run some errands and do some Christmas shopping! It should be a fun day! 🙂

Sidenote: When things happen like this weekend where you are stuck in the house for a while, remember to savor every minute of it. You are making memories, so choose to make them sweet, happy memories. I am not the type of person who likes to stay inside at home all day, but this weekend with Ryan was marvelous to say the least. I never want to take the quality time I can spend with my husband for granted. Be thankful for these moments and the time you can spend with your loved ones.
