Fitness Week of 2/10-2/16

Happy Monday everyone! I hope you all had a great weekend! I had a fantastic weekend celebrating Valentine’s Day with Ryan on Friday night and then celebrating my birthday with my family Saturday night and Sunday. (My real birthday is actually today though.) We all had so much fun! I wish I could share pictures with y’all, but still hoping to switch to self-hosting soon! Remember, you can follow me on Instagram to still keep up with some of my pictures!

Saturday night my parents took Ryan and I and my brother and SIL to Saltgrass, a nice steak house, for dinner. I had grilled chicken with vegetables and a salad, and it was delicious! That night we stayed up late talking and laughing since we were all spending the night at my parents’ house. Sunday morning Ryan, Ben, my Dad, and I all played tennis, which was a blast! Then my whole family came over for a huge lunch of turkey, dressing, corn casserole, and a ton of other good food and desserts! We also got to play some ping pong and shoot Ryan’s new bow and arrow I got him for Valentine’s Day. It was seriously such a perfect way to start my birthday! I look forward to celebrating some more tonight with Ryan, and Ryan even says he will take me out to eat just us this weekend to celebrate my birthday too! 🙂

Anyways, I normally like to share my workouts from the past week on Sundays, but I never got a chance to post yesterday, so I wanted to briefly share last week’s workouts with y’all today.

Monday: 7 miles, 20 minute post run yoga (from, my add-on leg workout 3xs through.

Tuesday: Love Your Body workout from Purelytwins and my amazing arms workout 2xs

Wednesday: 4x400s & 4x800s. I would run one 400, walk for a minute, run one 800, walk for two minutes, and then start again with a 400 until I completed the workout.

Thursday: 6 miles and 8 minute abs

Friday: yoga from

Saturday: 17 mile run

Sunday: active rest day, tennis with the family.

I was so excited and happy after my 17 mile run because I felt great! This was the longest distance I have ever run, and the fact that I felt good during it was really encouraging since I am getting closer and closer to my marathon!

Anyways, I better go because since I can’t put new pictures on my posts, I am trying to keep them short. 😉

Happy Valentine’s Day!

Happy Valentine’s Day everyone! This post is coming a little later than usual, but oh well.

I wasn’t sure if I was going to post today because of reasons stated in my last post, but I couldn’t resist!

I wish I could have been able to write the posts I wanted to about Valentine’s Day before this, but oh well, I will write them at some point. 🙂

So I’ll be honest, Valentine’s Day isn’t my favorite holiday. Probably because I think it’s a made up holiday so that stores can make money. But, I still enjoy today. 🙂 I think it’s so important, actually it’s most important, that people show love to the special people in their life year around, not just on today. That doesn’t mean celebrating today with that special person is wrong either though.

Ryan and I prefer to keep Valentine’s Day low key and not spend too much money. After all, my birthday is in three days, so that’s way more important to me than Valentine’s Day. 😉 But we still have plans to make tonight a fun, romantic, inexpensive date night. 🙂

I will go pick us up dinner at a restaurant Ryan has been wanting to try that is known for it’s burgers, fries,  and shakes. A.K.A. Ryan’s favorite kind of restaurant. When I am out picking up dinner, Ryan is going to make sure everything is perfect at home for a romantic, date night dinner at home. This is a perfect, low key Valentine’s Date for us. We would much rather do this than go out to an expensive restaurant that is extremely crowded and wait forever to be seated. Um, no thanks. We will stay at home and be comfortable. 🙂


I can almost guarantee I will be wearing fuzzy socks on this date. #totallynormal

I am also excited for the rest of this weekend! Like I have mentioned, my birthday is this Saturday, so this weekend we are celebrating that with my family.

Tomorrow morning Ryan and I are volunteering with a group from our church to do some type of canned food drive or something. (I’m not totally sure what we will be doing; I guess I will find out tomorrow!) Then tomorrow night Ryan and I are having dinner with my parents, brother, and SIL to celebrate my big day. I think we are all staying the night with my parents because Sunday we are having a big lunch with the rest of my family to celebrate my birthday and my little cousin’s 8th birthday, which was earlier this month. Here’s the whole group who should be at our Sunday lunch!

I am so excited for the birthday celebrations to begin!

Lucky for me though, the celebrations won’t end this weekend! Ryan and I will go out to eat by ourselves next weekend to celebrate my birthday! Since my birthday is on a Monday and I will have work the next day, I told Ryan I would rather us go out on a weekend so we won’t have to worry about working the next day. I also don’t mind extending my birthday celebrations. 😉

So there’s a little bit of what I will be up to this Valentine’s/birthday weekend! Oh I will also be fitting in a 17 mile run at some point! This will be the longest distance for me to ever run; I’m pretty excited!

Surprise, Surprise!

Today is a very special day. Today this beautiful woman turns 80 years young.


This is my amazing grandmother, MawMaw. Her birth name is Patsy, but her real name has been MawMaw ever since she had grandkids. I’m pretty sure that’s her legal name.

MawMaw is smart, wise, beautiful, a strong Christian wife, mom, and grandmother, and so so caring. Everyone loves MawMaw. I wish you could all know her because you would immediately see how wonderful she is, and I know she would impact you in such a marvelous way like she has impacted me and everyone else that has had the pleasure to be with her. She was a teacher for several years, but spent most of her time taking care of my PawPaw and her two kids (my Dad and Aunt). I have so many great memories with this amazing woman, and I treasure every moment I get to spend with her.

Since 80 is a pretty big birthday, we decided to surprise her yesterday! My parents told my MawMaw and PawPaw they would come over for lunch to celebrate her birthday, but they said they were the only ones who could make it. MawMaw and PawPaw totally understood that we  were all supposedly “busy”; they were just happy my parents were coming over. My parents told them they would bring food so they wouldn’t have to worry about anything.

Well my parents walked in and my grandparents closed the door. In about 15 seconds, my brother, SIL, aunt, cousin, her husband, their little boy, and Ryan and I came walking in their front door singing happy birthday. MawMaw’s jaw dropped. She was speechless. All of a sudden she just started crying and my grandfather did the same. It’s safe to say we surprised both of them. 🙂


Here are my grandparents with their grandkids and great grandkids. My cousin, Grace, (the girl sitting on the couch on the right) is holding a picture of her sister, Catie, and her family since they weren’t able to make it. (They live far away and Catie is pregnant and due in January so there was no way they could make the trip.) With the picture of Catie, we are all included in this picture. 🙂

We enjoyed some barbecue, green beans, macaroni and cheese, chips, veggies, and dips for lunch.


And of course birthday cake for dessert!

MawMaw, if you are reading this, I hope you know how much we all love you and are so thankful and grateful for everything you have done for all of us. You are such an amazing woman, and I look up to you so much. Thank you for being such an incredible role model for me. I LOVE YOU MAWMAW!

So that was our New Years Day. Ryan and I came home, relaxed, had leftovers for dinner, and watched House Hunters. It was a perfect way to start out 2014. 🙂

2. Do you eat black eyed peas for good luck? I don’t like black eyed peas, but my mom always makes me eat some on New Years Day. I usually swallow them like a pill, but we had two dips with black eyed peas in them this year that were really good, so for the first time ever I enjoyed the black eyed peas I ate on New Years!

Another Birthday Weekend for the Hubs

This weekend was fantastic, and I am ready to take on a new week! Ryan and I didn’t have to go anywhere, which was so nice, and it was fun to celebrate his birthday again with my parents, brother, and sister-in-law. All of these things made for a marvelous weekend, which means I obviously need to link up for MIMM. Thanks Katie for always hosting!


Saturday morning I went shopping first thing to get the food for the dinner I would be making for my family that night and for our food for the rest of the week. I discovered that I want to do all of my grocery shopping from now on early in the morning because the stores were almost empty, which was SO NICE! I came back home and immediately started cooking the sauce for the lasagna. I made my Aunt Nancy’s lasagna this summer, and Ryan absolutely loved it, so this was his request. The longer the sauce can cook the better, so I started at 10:30 in the morning.

After I got the sauce going, Ryan and I started cleaning up around our house so that it would look nice for everyone. My brother actually hadn’t seen our house since he helped us move in June, so we had done a lot to it since then and we wanted everything to look nice. Ryan was a HUGE help in getting our house clean, which I was very thankful for. When we got done cleaning we decided to go play some disc golf for a little bit before we needed to come back and shower.

In case you don’t know what disc golf is, it is basically just like golf, except you throw a frisbee and try to get it in this chain basket. There are a ton of disc golf courses around us, and Ryan loves the sport, so we took advantage of the beautiful afternoon and headed outside.

One of the birthday presents I gave Ryan was this disc golf bag. He was pretty excited to get to use it this weekend! Now instead of holding all six of his discs while he plays, he has a bag to put them in!


Once we got home, I showered real quick and assembled the lasagna to start baking before everyone got here.

And here is the finished product! It was a huge hit! (I am hoping I can share this recipe with y’all soon! It’s seriously the best lasagna recipe I have ever had!) We also had some bread and salad for a complete meal.


Afterwards we had dessert, and I had brownies, ice cream, and pumpkin pie for everyone to choose from. I enjoyed a brownie with ice cream, but I forgot to snap a picture. 😦 I also forgot to take a picture of my dinner plate, but I just had some lasagna with salad, no bread though.

The rest of the night we just spent talking and enjoying each other’s company. We then decided to get out my computer and try to get a nice picture of us all.

If you and your family have never just taken random pictures of yourselves, I highly suggest you do it. It was very entertaining and brought on lots of laughs. Plus, it was about 10:00 p.m., and I know we were all tired, so maybe do it later at night so that everyone is so tired they don’t realize how silly they are being. 😉 (I hope my family still loves me when they see that I shared these pictures. Haha, love you guys!)

Sunday after Ryan and I went to church we just relaxed and enjoyed being at home. We still had a bunch of leftovers from several meals last week, so we had that for lunch and dinner. We also went out to play some more disc golf that afternoon.


The sad part though was when Ryan’s favorite disc went into the water. Ryan went swimming to go look for it, (yes, swimming in cold water in November), but unfortunately he couldn’t find it. 😦


I also spent a big part of Sunday doing my food prep for the week.


I made homemade plantain bread (by purelytwins), roasted broccoli, squash, and brussel sprouts, honey roasted cinnamon chickpeas (by HungryHealthyGirl), peanut butter pumpkin granola (by NutButterRunner), and chopped up bell pepper. I’m ready for the week! I also was able to get all of our clothes washed for the week. I did not get them put up though, that will happen eventually this week. 🙂

Birthdays Are Too Fun To Only Celebrate Once

I hope you can all agree with me that birthdays are just too fun to only celebrate one day a year. That is why today we are having birthday celebration number 3 for Ryan! My parents, brother, and sister-in-law are all coming over tonight for dinner and Ryan’s birthday since none of them could see him on his actual birthday. I love that we are all so close we can have get togethers like this on the weekends!

So today, I am going to be cleaning up a little bit a lot around the house before everyone comes over, and I need to go to the grocery store speedy quick so I can start cooking dinner. I am making lasagna, (my aunt’s recipe, aka, the best lasagna EVER), so I need to get started making the sauce as soon as I can, because the longer it can cook, the better! Then for dessert we are having brownies and ice cream! This was Ryan’s meal request. 🙂 He obviously has amazing taste buds.

It’s going to be a short post since I have quite a bit to do, but I want to leave y’all with a few things going on in my life/what I have been eating that tastes absolutely fabulous.


I didn’t go to my elementary school to teach yesterday because I had seminar, so my friend and I that carpool together bought our caps and gowns for graduation! I can’t believe I am just a little over a month away from being a college graduate! 🙂


I went on a walk the other day by myself and I loved listening to Michael Buble Christmas music. You might say it’s too early, but I say, Tis The Season! 😉 Oh and if you haven’t ever heard Michael Buble’s Christmas cd, go buy it and listen to it now. I promise you won’t be disappointed.


We finally got to use our food processor from our wedding for the first time! We had been having major problems with it, and we had already returned two food processors. I guess the third time’s a charm! Oh, and by the way, I love it! I made some mashed cauliflower to try to make healthy “mashed potatoes”, but they weren’t that great. Not good, but not that great. Anyone have any good recipes for mashed cauliflower?


I woke up yesterday morning freezing, and this bowl of hot oatmeal was exactly what I wanted. It has half of a banana in it, some frozen strawberries that I microwaved, and peanut butter. This might look like a big bowl of mess, but I promise it was a big bowl of deliciousness.


Yesterday, Ryan and I took our dogs on another walk, and I was pretty excited to pull out my Under Armour running tights for the first time this season.


Last night I cooked us taco meat, and instead of putting mine in a tortilla I loaded up a sweet potato with the meat, onions, bell pepper, tomato, spinach, avocado, and hot sauce. This was seriously so good. The mixture of flavor from the sweet potato and then the spicy taco meat was perfect. I highly recommend trying this. I know you can’t even tell what it is I’m eating on my plate, but that’s because before I took the picture I had already tore into my sweet potato and mixed everything all together. I was hungry, and I just couldn’t wait to dig in. 😉 I also had some baked broccoli and zucchini on the side.


This was my breakfast this morning and it was perfect. It was inspired by paleomg’s easy delicious breakfast hash, which by the way is amazing. For this breakfast though I just cooked two pieces of natural bacon and then sauteed onions, bell peppers, some of a poblano pepper, tomato, spinach, and some already cook quinoa, and then cooked two over easy eggs in with it all. When it was done I topped it with avocado, and guys, just trust me, this was a darn good breakfast! After I took the picture I topped it with hot sauce, and I highly recommend doing that. I might share my exact recipe later. Would anyone be interested in that?

Anyways, I better go. I have a busy day! I hope everyone has a great weekend!
