Another Birthday Weekend for the Hubs

This weekend was fantastic, and I am ready to take on a new week! Ryan and I didn’t have to go anywhere, which was so nice, and it was fun to celebrate his birthday again with my parents, brother, and sister-in-law. All of these things made for a marvelous weekend, which means I obviously need to link up for MIMM. Thanks Katie for always hosting!

Saturday morning I went shopping first thing to get the food for the dinner I would be making for my family that night and for our food for the rest of the week. I discovered that I want to do all of my grocery shopping from now on early in the morning because the stores were almost empty, which was SO NICE! I came back home and immediately started cooking the sauce for the lasagna. I made my Aunt Nancy’s lasagna this summer, and Ryan absolutely loved it, so this was his request. The longer the sauce can cook the better, so I started at 10:30 in the morning.

After I got the sauce going, Ryan and I started cleaning up around our house so that it would look nice for everyone. My brother actually hadn’t seen our house since he helped us move in June, so we had done a lot to it since then and we wanted everything to look nice. Ryan was a HUGE help in getting our house clean, which I was very thankful for. When we got done cleaning we decided to go play some disc golf for a little bit before we needed to come back and shower.

In case you don’t know what disc golf is, it is basically just like golf, except you throw a frisbee and try to get it in this chain basket. There are a ton of disc golf courses around us, and Ryan loves the sport, so we took advantage of the beautiful afternoon and headed outside.

One of the birthday presents I gave Ryan was this disc golf bag. He was pretty excited to get to use it this weekend! Now instead of holding all six of his discs while he plays, he has a bag to put them in!

Once we got home, I showered real quick and assembled the lasagna to start baking before everyone got here.

And here is the finished product! It was a huge hit! (I am hoping I can share this recipe with y’all soon! It’s seriously the best lasagna recipe I have ever had!) We also had some bread and salad for a complete meal.

Afterwards we had dessert, and I had brownies, ice cream, and pumpkin pie for everyone to choose from. I enjoyed a brownie with ice cream, but I forgot to snap a picture. 😦 I also forgot to take a picture of my dinner plate, but I just had some lasagna with salad, no bread though.

The rest of the night we just spent talking and enjoying each other’s company. We then decided to get out my computer and try to get a nice picture of us all.

We said to do a fake laugh, and without planning it, we all put our heads up and opened our mouths wide.

If you and your family have never just taken random pictures of yourselves, I highly suggest you do it. It was very entertaining and brought on lots of laughs. Plus, it was about 10:00 p.m., and I know we were all tired, so maybe do it later at night so that everyone is so tired they don’t realize how silly they are being. πŸ˜‰ (I hope my family still loves me when they see that I shared these pictures. Haha, love you guys!)

Sunday after Ryan and I went to church we just relaxed and enjoyed being at home. We still had a bunch of leftovers from several meals last week, so we had that for lunch and dinner. We also went out to play some more disc golf that afternoon.

The sad part though was when Ryan’s favorite disc went into the water. Ryan went swimming to go look for it, (yes, swimming in cold water in November), but unfortunately he couldn’t find it. 😦

I also spent a big part of Sunday doing my food prep for the week.

I made homemade plantain breadΒ (by purelytwins), roasted broccoli, squash, and brussel sprouts, honey roasted cinnamon chickpeasΒ (by HungryHealthyGirl), peanut butter pumpkin granolaΒ (by NutButterRunner), and chopped up bell pepper. I’m ready for the week! I also was able to get all of our clothes washed for the week. I did not get them put up though, that will happen eventually this week. πŸ™‚
