Day Off

Good morning! Sorry my night got a little hectic last night and I’m just now posting, but let’s cover Monday!

Since Monday was Martin Luther King Jr. Day that meant I had the day off, SWEET! 2 day work week for me! 🙂 Which actually isn’t true, because I have so many things I need to do for school and the wedding, I will definitely be working more than two days this week. But it is nice to only HAVE to work for two days, because that gives me more times to do the other things I need to do.

Monday was great though. I got up and had some peanut butter oatmeal with half of a banana and a couple of strawberries in it. IMG_1267

To make this scrumptious bowl I used:

  • 1/2 cup of oats
  • A little less than 1 cup of water
  • 1 teaspoon of peanut butter
  • Half of a banana
  • 2 strawberries

I first just put the oats and water in and microwaved it for about 1 minute and a half, (you might have to go longer depending on your microwave) stirring it about every 30 seconds. You don’t have to stir it every thirty seconds, but I just think it helps the all of the oats absorb the water more. I don’t always stir it though. After it’s done, I stir in one teaspoon of peanut butter and then mixed in half of a banana sliced and two strawberries sliced.

I enjoyed a glass of water and the rest of my banana on the side. In case you haven’t already noticed, I like to use my “B” mug that I got for Christmas from my parents in the mornings. 🙂

After breakfast I went for a six mile run, and I was feeling it that day! I would say when I run on my own my average pace is usually somewhere over 9 minutes a mile, but Monday my average was 8:51 per mile!

I was one happy runner when I finished and saw my results! By the way, the picture above is my AWESOME Christmas present from Ryan! It is a Garmin Forerunner 310 XT, which is a super good triathlete’s training watch. I haven’t done a triathlon yet, but Ryan knows I want to someday. Also, after I did the Dallas Half-Marathon last December I kept telling Ryan how I thought I could have run faster, but I need to be running faster when I train. It was always hard for me to run faster when I train because I don’t know how fast I should go or anything. Well, this watch has a virtual partner, which means you can set it to be at whatever pace you want it to be set at (in the picture above I set it at 9:15 per mile) and the watch tells you how far ahead or behind that pace you are! Of course I was elated to see that I was pretty far away of my virtual partner! I definitely have to increase my pace on my virtual partner next time! I did get cold in my run though, and after mile 2 I ran into my apartment to grab my Nike gloves.

I have horrible circulation in my hands, so they are always cold! Cold hands warm heart I guess! 😉

After my run I showered and grabbed a quick lunch of leftover chicken tortilla soup and an apple.

After lunch, Ryan and I headed to the movies to see “The Hobbit” with my Dad. Now I had never seen any of the Lord of the Rings movies because I always thought they were weird and I was positive I wouldn’t like them. Well…I really liked “The Hobbit”! Now I want to see all of the Lord of the Rings movies! I guess you can never tell a book by its cover! Or in this case a movie. 🙂 But it sure was nice to spend the afternoon with my favorite men!

When we came back home I decided tonight would be a great night for Pilates so I got ready to head up to the rec. I absolutely love Pilates because it is relaxing and I love stretching out my body, but I can feel it working my muscles! My abs and arms got an awesome workout during the class, and it was hard!

After Pilates I headed home for dinner. I didn’t know what I wanted, but I was hungry and wanted something fast! I didn’t want to cook, so a tuna sandwich popped into my mind and I quickly started putting it together!

So I forgot to take a picture of my whole sandwich, but this is the tuna I used, and I loved it! I highly recommend this to anyone! It is the best tuna I have ever bought in a package, and the herb and garlic makes it super yummy! But I put this on two slices of toasted bread with tomato, onion, bell pepper, and 1/4 of an avocado. (You know I love stacking my sandwiches up with veggies!) Plus, I had some carrots, hummus, and pretzels!

And of course the hummus was Sabre roasted red pepper hummus! After dinner I went to Ryan’s and did some school work and then we went to Wal-Mart to get some groceries for the week. I had to get ready for a week of work!

But now I have to get ready for seminar in about one hour, better grab some breakfast!
